Our Story

Hisao Matsubayashi, the founder of slow, had operated confectionaries for more than 25 years in both of Japan and foreign countries.
Additionally, he has succeeded in taking care of producing sweets.
As his businesses went well, he got to realize he had forgot the real joy of baking, wealth of eating sweets,
and happiness of being surrounded by people and customers whom he can share the joy and wealth.
Then he made his mind to close all his businesses and started to re-think about the ideal sweets and ideal confectionaries.
Finally, he opened slow in April 2018.

Our philosophy

“slow” is named after Matsubayashi’s desire that he wants to provide cakes to help customers enjoy “slow” time:
cakes with joyful time spending with friends, cakes with relieved time after being exhausted,
cakes with happy time for birthdays. Our goal with cakes is that guests have
a little bit happier time thanks to our slow cakes.
We also emphasize that we never regard sweets as fashion. We believe that creating
original sweets gradually is similar to Wagashi Dukuri because it is more like raising children.
We aim that slow’s cakes keep being loved by next other generations.
We serve to our communities to achieve our goal and be regarded as a confectionery in your town.
